The 2nd Date Cake recipe I found in Ma's recipe file we found in NC in July 2019. I guess she liked dates? LOL

Method:
Bake

Ingredients

  • 1 pkg
    pitted dates, chopped
  • 1 c
    boiling water
  • 1 tsp
    soda
  • 1/2 c
    shortening
  • 1 c
    sugar
  • 1 3/4 c
    flour
  • 1
    egg
  • ·
    vanilla
  • 1/2 tsp
    salt
  • 1/2 c
    chopped nuts
  • ICING

  • 1/2 c
    brown sugar
  • 2 Tbsp
    flour
  • 1/4 c
    melted butter
  • 2 Tbsp
    water
  • 1/2 c
    chopped nuts

How to Make Date Cake & Icing, Ma

Step-by-Step

  1. Pour water over dates and let simmer until thick. Let date mixture cool while mixing second part. Then add alternately with flour and date mixture. Doesn't have to be entirely cool. Bake at 350 degrees 35 min.
  2. Icing:
    Mix, spread on cake while still hot and bake 5 more min.
