Younger, money was very tight. Dad was Army, so paydays were once a month. Momma called this Poor Cake & was our end of month treat! Made by Scratch!!

Ingredients

  • 1 stick butter
  • 1/2 cup crisco shortening (solid)
  • 4 teaspoons cocoa powder *i add 4-6 tsp. for richer chocolate flavor
  • 1 cup water
  • 2 cups all purpose flour
  • 2 cups sugar
  • 1 tablespoon cinnamon, ground *heaping
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 2 - eggs, slightly beaten
  • 3 cups powdered sugar
  • 1 can evaporated milk 5oz
  • 1/2 cup buttermilk *can used powdered, mixed

How To Make daleine's poor cake

  • Step 1
    Preheat Oven 400 degrees Grease & Flour Coat 11x13 or 13x9
  • Step 2
    In a small saucepan, bring to a rapid boil: Butter, Crisco, Cocoa, and water. Remove from heat, set to side
  • Step 3
    Shift together in large mixing bowl: Flour, Sugar, Cinnamon, Baking Soda, Salt, Baking Powder
  • Step 4
    Add to Dry Ingredients: Buttermilk, Eggs, and Vanilla. Mix Well
  • Step 5
    Slowly add coca mixture to the large mixing bowl. Mix on medium speed for two minutes or until well blended.
  • Step 6
    Poor into prepared baking pan. Bake for 20 minutes or until toothpick inserted in middle. comes out clean.
  • Step 7
    Once you have removed from oven. Poke holes into the cake 1-1/2" apart with the end of a butter-knife. Mix Powdered Sugar and Carnation Milk until glaze has reached a ribbon texture. Slowly pour glaze into each hole on surface of cake. Once filled, pour remaining glaze on cake and smooth with spoon. Allow to completely cool before serving.
