custard cake & seven minute icing

Every celebration of life, whether birthday or family reunion, my grandmother always made this cake.

Ingredients

  • CAKE
  • 1 box white cake mix + ingredients listed on box (be sure to use the egg whites only and not the whole egg)
  • 5 - drops orange flavoring
  • 5 - drops lemon flavoring
  • 3 - drops almond flavoring
  • 3 - drops coconut flavoring
  • 2/3 cup coconut
  • 1 teaspoon pure vanilla extract
  • CUSTARD
  • 3 - egg yolks
  • 1 cup milk
  • 1/2 tablespoon flour
  • 1/4 cup coconut
  • 1/4 cup sugar
  • 1 teaspoon pure vanilla extract
  • SEVEN MINUTE ICING
  • 2 tablespoons corn syrup, light
  • 2 - egg whites
  • 1 cup sugar
  • 1/8 teaspoon cream of tarter
  • 7 tablespoons water
  • 1 teaspoon pure vanilla extract

How To Make custard cake & seven minute icing

  • Step 1
    Cake: Mix all ingredients listed on the cake box plus coconut, vanilla, orange, lemon, almond, and coconut flavoring. Bake as directed on cake mix box, using two round cake pans.
  • Step 2
    Custard: Combine all ingredients in a sauce pan over medium heat. Bring mixture to boil stirring constantly. Once mixture thickens remove from heat and cool.
  • Step 3
    Icing: Place all ingredients, EXCEPT VANILLA, in double boiler. Beat with mixer until mixture holds its shape (about 7 minutes). Remove from heat and fold in vanilla.
  • Step 4
    Assembly: Place one cake round on platter. Spread custard over the top. Place remaining cake round over custard. Insert toothpicks to help hold cake in place. Spread icing over cake sides and top. Sprinkle entire cake surface with shredded coconut.
