Tips: If the eggs are at room temperature, they will not cool the batter and slow the rising. The milk can be heated to a warmer temperature if the eggs are chilled. The most important step is to add the dissolved yeast to a lukewarm mixture.

warm water (105 degrees f to 115 degrees f)
1/2 c
milk
1/2 c
butter or margarine

egg
1
egg white
1/2 tsp
salt
1/2 c
granulated sugar
1 1/2 c
all purpose flour

CRUMB TOPPING

5 Tbsp
butter or margarine
1/2 c
granulated sugar
1
egg yolk
1 c
all purpose flour
2 tsp
cinnamon

greased 9 x 9-inch baking pan

How to Make Crumb Cake

Step-by-Step

  • 1Preheat oven to 350 degrees F.
  • 2Dissolve the yeast in the warm water.
  • 3Set aside.
  • 4In a saucepan, combine the milk and butter, cut into pieces.
  • 5Heat this until just lukewarm.
  • 6In a mixing bowl, combine the yeast, milk mixture, 1 egg, 1 egg white, salt, sugar and 1/2 cup flour.
  • 7Beat for 2 minutes.
  • 8Add remaining flour.
  • 9Beat into a stiff batter for 2 minutes at high speed, if using a mixer.
  • 10Spread into a greased 9 X 9-inch baking pan.
  • 11Make the topping by creaming together the butter and sugar.
  • 12Blend in the egg yolk, flour and cinnamon. The mixture will be crumbly.
  • 13Sprinkle topping over the dough.
  • 14Cover the baking pan.
  • 15Let rise in a warm place until almost doubled, about 1 hour.
  • 16Bake at 350 degrees F for 35 to 40 minutes.
  • 17Cool on a wire rack.
  • 18Cut into squares.
