Being a New Yorker, I love love love cheesekcake to death. When I came across this little number of bite size ones, it was like a dream come true and I could not resist it!

Ingredients

  • 6 - graham cracker boards, finely ground
  • 3 tablespoons melted butter
  • 6 tablespoons granulated sugar, divided
  • 1 pound cream cheese,softened
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract and lemon zest (each)
  • 2 - eggs
  • 1 1/2 cups whipped topping
  • 1 1/2 cups blueberries and/or sliced strawberries

How To Make creamy berry minis

  • Step 1
    Heat oven to 325. In bowl, combine cracker crumbs,butter and 2 tbs sugar;press crumb mixture into bottom of cupcake liners placed in wells of 12 well muffin pan.
  • Step 2
    In bowl of electric mixer on medium speed, beat cream cheese and remaining sugar 30 seconds. Add heavy cream,vanilla extract and lemon zest. Beat 30 seconds. Beat in eggs, 1 at a time, until combines. Divided evenly among cupcake liners.
  • Step 3
    Bake 20 minutes or just until set. Let cool completely. Divide whipped topping evenly among tops of cupcakes. Top with fruit, arranging combinations as desired.
