This recipe is from Susanne Spickler (North Ogden, Utah) courtesy of Taste of Home magazine. I'm posting here to make my Christmas gift basket shopping list.

Ingredients

  • MUFFINS
  • 3 cups all purpose flour
  • 2 cups granulated sugar
  • 1/2 cup baking cocoa
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups cold water
  • 3/4 cup canola oil
  • 1 - egg
  • 2 tablespoons white vinegar
  • 2 teaspoons vanilla extract
  • FILLING
  • 4 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/8 teaspoon salt
  • 2 tablespoons beaten egg
  • 1/2 teaspoon vanilla extract
  • 3/4 cup chocolate chips, mini
  • - powdered sugar

How To Make cream-filled chocolate supreme muffins

  • Step 1
    In large bowl, combine flour, sugar, cocoa, baking soda & salt. In another bowl, combine water, oil, egg, vinegar & vanilla. Stir into dry ingredients until just moistened.
  • Step 2
    For filling, beat cream cheese, sugar & salt until smooth. Beat in egg and vanilla. Fold in chips.
  • Step 3
    Fill paper cups 1/2 full with muffin batter. Pipe filling into center of each; cover with remaining batter.
  • Step 4
    Bake at 350 for 25-30 minutes, or until toothpick comes out clean. Sprinkle with powdered sugar, cool completely on wire racks.
