Ingredients

  • 2 - eggs, beaten
  • 1 1/3 cups sugar
  • 2 teaspoons vanilla
  • 2/3 cup melted butter
  • 3 cups grated zuchinni
  • 2 teaspoons baking soda
  • 1 pinch salt
  • 1 teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 1 cup walnuts or pecans (optional)
  • 1 cup cranberry raisins

How To Make cranberry zuchini bread

  • Step 1
    preheat oven to 350. mix sugar, eggs, and vanilla until well mixed
  • Step 2
    mix in zuchini and melted butter.
  • Step 3
    sprinkle in baking soda and salt. mix in
  • Step 4
    add flour a 3rd at a time.
  • Step 5
    sprinkle in cinnamon and nutmeg and fold in nuts and cranberries.
  • Step 6
    divide batter into two buttered loaf pans, bake 1 hour. cool 10 minutes and pull from the pan and cool on racks
