cranberry quick cake

I made this recipe up to enter a Ocean Spray cranberry recipe contest. It came out delish. It is moist ~ and I really love anything with cranberries in it ! (This is my own photo)

Ingredients For cranberry quick cake

  • 1 1/4 c
    sifted flour
  • 1/4t tsp
    nutmeg
  • 1/8 tsp
    cloves
  • 3/4 slice
    sugar
  • 1/2 c
    shortening
  • 2/3 c
    applesauce
  • 1 md
    egg
  • 1/2 tsp
    vanilla
  • 1/2 c
    ocean spray whole fresh cranberries i have used the whole frozen as well.
  • 1/2 c
    chopped walnuts
  • 1/2 tsp
    each of/cinnamon/salt & baking soda

How To Make cranberry quick cake

  • 1
    Sift together all dry ingredients, add egg, shortening, applesauce and vanilla. Beat until smooth, stir in cranberries and nuts.

    Spread in well greased 9" square pan for bars, or 8" square pan for cake. Bake 25-30 min. (depending on what size pan you use) check with toothpick in middle) When taken from oven spread 1 can of cranberry sauce over top as glaze while still warm. When cool, top with either, cool whip, confectioners sugar, or vanilla ice cream.
