My mom had a recipe for what we always called Cranberry Pudding. It was a newspaper clipping. When mom died her recipe just dissapeared. I searched every Cranberry or Molasses recipe I could find looking for this one. No luck. So..... I made my own. I had watched mom make in many many times over the years so from memory & trial and error I finally came up with a close match. The only time mom made it was Thanksgiving & Christmas because of the fresh cranberries in it. Dont know the "real" name for this recipe. Hope you enjoy it as much as I always have.

Ingredients

  • 3 cups all purpose flour
  • 2 - eggs
  • 1 teaspoon baking powder
  • 1 1/2 cups dark molasses
  • 1 package fresh cranberries

How To Make cranberry pudding

  • Step 1
    cook fresh cranberries as per instructions on back of bag (with the sugar).
  • Step 2
    Preheat oven to 350 degrees. Oil & flour 9 by 11 rectangle metal cake pan.
  • Step 3
    After cooked cranberries have cooled, mix together with all other ingredients.
  • Step 4
    Pour batter into pan. Bake for 40 mins. its done when toothpick inserted into center comes out clean. Cool in pan. cut into squares & enjoy!!!
