My whole family loves anything cranberry, and I actually had 3 bags left from over stocking up last Thanksgiving. They've been after me to make something cranberry...so here is what I decided to make. I was not disappointed in the least. It's delicious alone or with the cranberry topping. Yum!
How To Make ~ cranberry pound cake w/ cranberry topping ~ easy
Make glaze and cool.
Chop cranberries in food processor. Add the cranberries to a small saucepan then add water, sugar and zest. Bring to a boil, stirring occasionally. Reduce to a simmer and cook down for 10 - 12 minutes, stirring occasionally. It will thicken more as cooling.
Preheat oven to 350 degree F. Spray and flour a 9 x 5 bread pan. set aside.
In a large bowl, beat the butter, sugar, allspice and salt until fluffy.
Turn mixer to low and beat in flour a little at a time, until all is incorporated.
Fold in the cranberries and zest.
Spread batter into prepared pan and bake for 60 - 70 minutes or until pick comes out clean.
