Ingredients

  • 3 cups flour
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 - eggs
  • 1 cup sugar
  • 2 cups canned whole berry cranberry sauce
  • 1/2 cup milk
  • 1/2 cup canola oil
  • 1/2 cup coarsely chopped pecns

How To Make cranberry-nut loaf

  • Step 1
    Preheat oven to 350. Coat 2 (8x4 inch) loaf pas with cooking spray.
  • Step 2
    In a large bowl, combine flour, baking powder, baking soda, and salt.
  • Step 3
    In a medium bowl, beat eggs, sugar, cranberry sauce, milk and oil till smooth. Add to the flour mixture and beat until just combined. Stir in pecans.
  • Step 4
    Transfer batter to pans. Bake for 45 minutes or until a toothpick inserted in center comes out clean. Cool loaves in pans for 5 minutes. Turn out onto a wire rack to finish cooling.
