How to Make Cranberry-Nut Loaf
- Preheat oven to 350. Coat 2 (8x4 inch) loaf pas with cooking spray.
- In a large bowl, combine flour, baking powder, baking soda, and salt.
- In a medium bowl, beat eggs, sugar, cranberry sauce, milk and oil till smooth. Add to the flour mixture and beat until just combined. Stir in pecans.
- Transfer batter to pans. Bake for 45 minutes or until a toothpick inserted in center comes out clean. Cool loaves in pans for 5 minutes. Turn out onto a wire rack to finish cooling.
