The aroma of this quick and easy cake will make your mouth water. I think it is the almond extract in it that really makes it a winner. And hot out of the oven it is delicious.

Ingredients

  • 1 cup all purpose flour
  • 1/2 cup sugar plus 1/3 cup sugar, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 - egg, lightly beaten
  • 1/2 cup 2% milk
  • 1 tablespoon orange juice
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon almond extract
  • 2 cups cranberries, fresh or frozen
  • TOPPING
  • 1/4 cup all-purpose flour
  • 3 tablespoons sugar
  • 2 tablespoons cold butter

How To Make cranberry crumb cake

  • Step 1
    Preheat oven to 375 degrees and spray an 8" square baking dish with nonstick cooking spray.
  • Step 2
    In a large bowl, combine the flour, 1/2 cup sugar, baking powder and salt.
  • Step 3
    Combine the egg, milk, orange juice, oil and extract; stir into dry ingredients. Pour into baking dish.
  • Step 4
    Combine cranberries and remaining 1/3 cup sugar; spoon over batter.
  • Step 5
    For the topping, combine flour and sugar in a small bowl; cut in the butter until crumbly. Sprinkle over cranberries.
  • Step 6
    Bake at 375 degrees for 35-45 minutes or until edges begin to pull away from sides of pan. Refrigerate leftovers, if you have any.
