Today 10-24-2013 I made this at 6:30 AM..So my family could have it when they got up for breakfast this morning..So tender and moist...It was soon devoured!

Ingredients

  • BERRIES

  • 18 oz
    fresh cranberries (1 1/2 bags), sorted (3 cups cooked sauce)
  • 1 1/2 c
    water
  • 1 1/2 c
    granulated sugar
  • 1 pinch
    cinnamon
  • 1 tsp
    vanilla
  • CAKE

  • 2 c
    all purpose flour
  • 3 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1 dash(es)
    cinnamon,optional
  • 1/4 c
    granulated sugar
  • 1/2 c
    butter flavored crisco
  • 1/2 c
    milk
  • 1 large
    egg, beaten
  • CUSTARD SAUCE

  • 2 large
    eggs
  • 1/4 c
    granulated sugar
  • 1 dash(es)
    cinnamon,optional
  • 1 pinch
    salt
  • 1 1/2 c
    milk
  • 1 tsp
    vanilla extract
  • ·
    cook ingredients in top of double boiler, stirring constantly until mixture coats a spoon. add the vanilla and cinnamon.

How to Make Cranberry Coffeecake

Step-by-Step

  1. Berries:
    Can use 3 cups canned and drained, add the vanilla and cinnamon.
    To cook Fresh:
    Bring the water and sugar to a boil in a medium saucepan. Add cranberries and return to a a boil. Reduce heat and boil gently for 10 minutes, stirring occasionally. Stir in vanilla and cinnamon. Set aside while preparing cake..
  2. Cake:
    Combine flour,baking powder, baking soda, salt, cinnamon and sugar in a mixing bowl. Cut in shortening with a pastry blender of 3 tined fork, until the shortening is in small pieces.
    Add milk to beaten egg and then pour into dry ingredients.Mix until flour is moistened and dough will hold together.Set aside.
  3. With a slotted spoon scoop cranberries from sauce and place in bottom of an 8 inch square baking dish sprayed with Joy of Baking with flour spray( save liquid from berries for another baking or cooking adventure).
  4. Drop batter evenly over cranberries in prepared dish;spread to cover evenly.Bake at 350^ for about 30 minutes.Cool slightly; and then invert onto serving plate.Pour custard sauce over each serving if desired:or whipped cream.
