Today 10-24-2013 I made this at 6:30 AM..So my family could have it when they got up for breakfast this morning..So tender and moist...It was soon devoured!

Ingredients

  • BERRIES
  • 18 ounces fresh cranberries (1 1/2 bags), sorted (3 cups cooked sauce)
  • 1 1/2 cups water
  • 1 1/2 cups granulated sugar
  • 1 pinch cinnamon
  • 1 teaspoon vanilla
  • CAKE
  • 2 cups all purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 dash cinnamon,optional
  • 1/4 cup granulated sugar
  • 1/2 cup butter flavored crisco
  • 1/2 cup milk
  • 1 large egg, beaten
  • CUSTARD SAUCE
  • 2 large eggs
  • 1/4 cup granulated sugar
  • 1 dash cinnamon,optional
  • 1 pinch salt
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract
  • - cook ingredients in top of double boiler, stirring constantly until mixture coats a spoon. add the vanilla and cinnamon.

How To Make cranberry coffeecake

  • Step 1
    Berries: Can use 3 cups canned and drained, add the vanilla and cinnamon. To cook Fresh: Bring the water and sugar to a boil in a medium saucepan. Add cranberries and return to a a boil. Reduce heat and boil gently for 10 minutes, stirring occasionally. Stir in vanilla and cinnamon. Set aside while preparing cake..
  • Step 2
    Cake: Combine flour,baking powder, baking soda, salt, cinnamon and sugar in a mixing bowl. Cut in shortening with a pastry blender of 3 tined fork, until the shortening is in small pieces. Add milk to beaten egg and then pour into dry ingredients.Mix until flour is moistened and dough will hold together.Set aside.
  • Step 3
    With a slotted spoon scoop cranberries from sauce and place in bottom of an 8 inch square baking dish sprayed with Joy of Baking with flour spray( save liquid from berries for another baking or cooking adventure).
  • Step 4
    Drop batter evenly over cranberries in prepared dish;spread to cover evenly.Bake at 350^ for about 30 minutes.Cool slightly; and then invert onto serving plate.Pour custard sauce over each serving if desired:or whipped cream.
