I made this cake for a open house at my husbands work and it was well received. Same thing happened when I made it for my son's school.

Ingredients

  • 1/2 c
    butter, softened
  • 1 c
    sugar
  • 2 large
    eggs
  • 1 tsp
    almond extract
  • 2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 can(s)
    jellied cranberry sauce
  • 1 c
    sour cream
  • 1 c
    white chocolate chips
  • 2 Tbsp
    butter
  • 2 tsp
    milk

How to Make Cranberry Coffee Cake with White Chocolate Glaze

Step-by-Step

  1. Preheat oven to 350 degrees. Grease and flour 10 or 12 cup bundt pan.
  2. In a bowl combine the flour, baking soda, baking powder, and salt. In another bowl combine sour cream and cranberry sauce, mix well to combine.
  3. Using a mixer, cream together 1/2 cup butter and the sugar until light and fluffy. Beat in the eggs one at a time, then add almond extract.
  4. Alternate adding cranberry mixture and flour mixture to butter mixture.
  5. Pour batter into prepared pan. Bake for 50-55 min in preheated oven. Check with toothpick near center to see if done.
  6. Cool in pan for 10 min then transfer to cooling rack.
  7. While the cake is cooling melt chocolate and butter in a double boiler. When melted, transfer to small bowl and add milk in teaspoon increments until smooth consistency.
  8. Pour glaze over cooled cake. Let glaze set up for about an hour and serve.
