I made this cake for a open house at my husbands work and it was well received. Same thing happened when I made it for my son's school.

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon almond extract
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 can jellied cranberry sauce
  • 1 cup sour cream
  • 1 cup white chocolate chips
  • 2 tablespoons butter
  • 2 teaspoons milk

How To Make cranberry coffee cake with white chocolate glaze

  • Step 1
    Preheat oven to 350 degrees. Grease and flour 10 or 12 cup bundt pan.
  • Step 2
    In a bowl combine the flour, baking soda, baking powder, and salt. In another bowl combine sour cream and cranberry sauce, mix well to combine.
  • Step 3
    Using a mixer, cream together 1/2 cup butter and the sugar until light and fluffy. Beat in the eggs one at a time, then add almond extract.
  • Step 4
    Alternate adding cranberry mixture and flour mixture to butter mixture.
  • Step 5
    Pour batter into prepared pan. Bake for 50-55 min in preheated oven. Check with toothpick near center to see if done.
  • Step 6
    Cool in pan for 10 min then transfer to cooling rack.
  • Step 7
    While the cake is cooling melt chocolate and butter in a double boiler. When melted, transfer to small bowl and add milk in teaspoon increments until smooth consistency.
  • Step 8
    Pour glaze over cooled cake. Let glaze set up for about an hour and serve.
