    1 1/4 cups sifted flour
  • ·
    1/2 cup sugar
  • ·
    1 1/2 tsp. baking powder
  • ·
    1/4 tsp. salt
  • ·
    4 tbsp. butter or margarine
  • ·
    1 slightly beaten egg
  • ·
    3 tbsp. milk
  • ·
    1 tsp. vanilla
  • ·
    1 1/2 cups fresh cranberries, chopped
  • ·
    1/2 cup sifted flour
  • ·
    1/2 cup brown sugar
  • ·
    1/2 tsp. ground cinnamon
  • ·
    4 tbsp. butter or margarine

How to Make Cranberry Coffee Cake


  1. Sift together the 1 1/4 cups flour, sugar, baking powder and salt. Cut in first 4 Tbsp. butter til mixture resembles coarse crumbs. Mix egg, milk and vanilla; add t dry ingredients and mix well. Spread in greased 8 x 8 inch baking pan. Spoon cranberries over batter
  2. Mix 1/2 cup flour, brown sugar and cinnamon. Cut in remaining 4 Tbsp. butter til mixture resembles coarse crumbs. sprinkle over cranberries. Bake at 350 for 45 to 50 minutes
