Ingredients

  • - 1/2 cup butter
  • - 2 eggs
  • - 1 tsp baking powder
  • - 1 (8 ounce ) carton sour cream
  • - 1/2 cup chopped pecans
  • - 1 cup sugar
  • - 2 1/2 cups cake flour
  • - 1 tsp soda
  • - 1 tsp vanilla
  • - 1 (16 ounce ) can whole cranberry sauce
  • GLAZE
  • - 1 cup confectioners sugar
  • - 1/2 tsp vanilla extract
  • - 2 tbsps milk

How To Make cranberry coffee cake

  • Step 1
    Cream butter and gradually add sugar beating until light and creamy. Add eggs one at a time beating well after each addition.
  • Step 2
    Combine dry ingredients and add alternately with sour cream beating well. Blend in the vanilla extract.
  • Step 3
    Spoon 1/3 of mixture into greased and floured 10-inch tube pan or bundt pan. Spread 1/3 cranberry sauce over batter. Repeat layers twice more ending with cranberry sauce. Sprinkle pecans over top.
  • Step 4
    Bake at 325 degrees for 1 hr or until done. Let cool 5 minutes before removing from pan. Drizzle glaze over top.
