cranberry bars & cream cheese frosting

I just love these bars...the tartness of the cranberries go well with the cream cheese frosting. This would be a nice addition to your Holiday meals. Enjoy!! My photos

Ingredients

  • 1 stick butter, room temperature
  • 1 1/2 cups sugar
  • 2 - eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 2 cups whole fresh cranberries
  • 1/2 cup chopped pecans
  • FROSTING
  • 2 1/2 cups confectioners' sugar
  • 4 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 2 teaspoons milk
  • 1 teaspoon vanilla extract

How To Make cranberry bars & cream cheese frosting

  • Step 1
    Preheat oven to 350 degrees F. Grease a 13 x 9 baking pan.
  • Step 2
    In bowl, cream together butter and sugar. Beat in eggs and vanilla. Add flour, salt, baking powder, cranberries and nuts.
  • Step 3
    Spread batter into pan. Batter will be thick ( If too thick, add about 1/3 cup buttermilk or milk to loosen some.)
  • Step 4
    Bake in preheated oven 35 to 40 minutes. Cool completely.
  • Step 5
    Frosting: In bowl, beat together all ingredients.
  • Step 6
    Spread on cooled bars and cut into small squares...enjoy!
