    eggs
  • 1 1/2 c
    sugar
  • 1 c
    cooking oil
  • 1 c
    fig preserves
  • 1 tsp
    vanilla
  • 2 1/4 c
    plain flour
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1 tsp
    cinnamon
  • 1 tsp
    allspice
  • 1 tsp
    salt
  • 1 c
    buttermilk
  • 1 c
    chopped pecans

How to Make Cousin Joyce's Fig Preserve Cake

Step-by-Step

  1. Beat eggs. Add sugar then oil. Add perserves and beat well. Add vanilla. Sift dry ingredients together and add alternately with buttermilk. Add nuts last and bake 1 hour at 350 degrees. may use glaze if you wish.
  2. Glaze: 1 c sugar,3/4 c butter, 1 cup buttermilk, 1 tsp. vanilla. Boil on low heat. Stir often until thick. Spread on cake or use cream cheese icing.
