This has become the first recipe we grab out of the recipe box when the fall apples hit the grocery stores! Although it calls for Granny Smith, we have used just about any kind of apple we can get our hands on to make this nummy recipe.

Ingredients For country fresh apple cake

2 cflour

1 cchopped pecans

4 mddice unpeeled granny smith apples

2 tspcinnamon

1 tspsalt

2eggs
-
1/2 coil

2 tspvanilla extract

2 tspbaking soda

8 ozfrozen whipped topping, thawed
How To Make country fresh apple cake

1Combine sugar, flour, pecans, apples, cinnamon and salt in a large bowl.

2In a smaller bowl, beat together eggs, oil, vanilla and baking soda.

3Stir egg mixture into flour mixture just until blended. It will be dry looking!

4Pour into a well greased 9X13 pan.

5Bake at 350 degrees for 45 to 60 minutes (watch carefully so that the cake sets but doesn't become to dry on the edges).

6Serve warm with whipped topping or vanilla ice cream.
