This has become the first recipe we grab out of the recipe box when the fall apples hit the grocery stores! Although it calls for Granny Smith, we have used just about any kind of apple we can get our hands on to make this nummy recipe.

Ingredients
- 2 cups sugar
- 2 cups flour
- 1 cup chopped pecans
- 4 medium dice unpeeled granny smith apples
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 2 - eggs
- 1/2 cup oil
- 2 teaspoons vanilla extract
- 2 teaspoons baking soda
- 8 ounces frozen whipped topping, thawed

Step 1Combine sugar, flour, pecans, apples, cinnamon and salt in a large bowl.

Step 2In a smaller bowl, beat together eggs, oil, vanilla and baking soda.

Step 3Stir egg mixture into flour mixture just until blended. It will be dry looking!

Step 4Pour into a well greased 9X13 pan.

Step 5Bake at 350 degrees for 45 to 60 minutes (watch carefully so that the cake sets but doesn't become to dry on the edges).

Step 6Serve warm with whipped topping or vanilla ice cream.
