I truly enjoyed making these. I love cornbread recipes and this one is a tried and true recipe.

Makes 20 cakes
Ingredients
- 1 cup sifted flour
- 1 cup corn meal (i used yellow)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 - egg, well beaten
- 1 1/4 cups buttermilk
- 4 tablespoons shortening, melted
How To Make corn meal griddle cakes

Step 1Sift flour once, measure.

Step 2Add cornmeal, baking soda, and salt and sift again.

Step 3Combine egg, buttermilk, and shortening.

Step 4Add to flour mixture. Stir only until blended.

Step 5Bake on hot, greased griddle. ***I used a cast iron skillet and put enough oil in it as if I was cooking just regular pancakes. Make sure the oil is hot. I used a measuring cup to pour into the skillet.****
