This cake was always made by one of my aunts. I finally got the super easy recipe out of her and now the family looks to me to make it for functions. The combination of these simple ingredients are divine on a hot summer night.

How to Make Cool Summer Cake

Step-by-Step

  1. Prepare Pistachio pudding according to directions on box and refrigerate.
  2. Prepare yellow cake mix according to directions on box using a 13x9 baking pan/dish.
  3. When cake is finished baking and while hot poke holes throughout and pour the juice from the crushed pineapple then refrigerate.
  4. When the cake is completely cooled, top with the remaining crushed pineapple.
  5. Top with pistachio pudding then top with Cool Whip.
  6. Refrigerate until ready to serve. Enjoy!
