One of the best cooks I ever knew brought these to work more than once and everyone always loves them. I made them for my kids and didn't tell them about the surprise in the middle. It's a pretty tasty surprise!

Ingredients
- 8 ounces cream cheese, softened
- 1 large egg
- 1/2 cup sugar
- 1/8 teaspoon salt
- 3 cups flour
- 2 cups sugar
- 1/2 cup cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups water
- 2/3 cup oil
- 2 tablespoons vinegar
- 2 teaspoons vanilla extract
How To Make coleen's cream cheese chocolate cupcakes

Step 1Combine cream cheese, egg, 1/2 cup sugar, and 1/8 teaspoon salt. Shape into small balls, about 1 teaspoon of cheese mixture.

Step 2Sift together flour, 2 cups sugar, cocoa powder, baking soda and 1 teaspoon salt. Add remaining 4 liquid ingredients.

Step 3Fill paper cups 1/3 full. Drop cheese ball in middle.

Step 4Bake at 350 degrees F. for 20 minutes. Makes approximately 36 cupcakes.
