This cake is moist and buttery, with a perfect crumb topping. Great in the morning with a cup of coffee... one of the few times it's acceptable to have dessert for breakfast ;)

- 6 tablespoons unsalted butter, softened
- 3/4 cup sugar
- 2 - eggs
- 1 1/2 teaspoons vanilla extract
- 3/4 cup sour cream
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- CRUMB
- 8 tablespoons unsalted butter, softened
- 3/4 cup flour
- 1/4 cup sugar
- 1/4 cup packed brown sugar
- 1 teaspoon cinnamon
- 1/8 teaspoon salt
How To Make coffee crumb cake

Step 1Preheat oven to 350.

Step 2Cream 6 tablespoons of butter and 3/4 cup sugar until light and fluffy. Slowly beat in the eggs, one at a time, beating well after each addition. Beat in the vanilla extract and sour cream until blended.

Step 3In another bowl, combine 1 1/2 cups flour, baking powder, soda, 1/2 teaspoon of salt. Slowly beat the flour mixture into the batter until blended. Pour the batter into a well greased, 9 inch round pan.

Step 4Next, combine 8 tablespoons of butter with 1/4 cup brown sugar, 1/4 cup white sugar, 3/4 cup flour, cinnamon, and 1/8 teaspoon salt. Mix together, then crumble the topping with your fingers on the top of your cake.

Step 5Bake for 45 minutes, or until tester inserted to the center comes out clean.
