Coconut Streusel Spice Cake

Ingredients

FOR THE CAKE :

1 boxspice cake mix

1/4 cbutter
-
3eggs
-
3/4 cmilk
-
1/3 cflaked coconut
-
1/3 cchopped nuts ; pecans or walnuts

FILLING :
-
3/4 cflaked coconut
-
1/2 cchopped nuts ; pecans or walnuts
-
1/2 cbrown sugar, firmly packed
-
2 Tbspflour
-
2 tspcinnamon
-
GLAZE :
-
1 cpowdered sugar
-
1 Tbspbutter, room temperature
-
2 to 3 Tbspmilk
How to Make Coconut Streusel Spice Cake
- Grease and flour a 12 cup Bundt ban or a 10" tube pan.( I use the can spray already mixed together ).
- In a large mixing bowl combine the cake mix , eggs , milk and butter . Using an electric mixer on low speed mix until its all blended together. Fold in the measured coconut and nuts for the cake.
- Pour 1/2 the batter in the prepared bundt pan.
- In a small mix up the ingredients for the filling ; Sprinkle 1 cup of the filling on top of the cake in the bundt pan ; Reserve 1/2 cup filling for top of cake.
- Cover filling with the remaining cake batter and then sprinkle the reserved filling mixture on top.
- Bake @ 350° for 45-55 minutes or until done.
- COOL CAKE UPRIGHT IN PAN FOR 30 MINUTES AND THEN INVERT PAN AND REMOVE CAKE FROM THE PAN.COOL COMPLETELY.
- In a small mixing bowl mix up the glaze ingredients until you achieve a drizzle consistency icing ; drizzle over the top and down the sides of the cake.
