Ingredients

  • FOR THE CAKE :

  • 1 box
    spice cake mix
  • 1/4 c
    butter
  • 3
    eggs
  • 3/4 c
    milk
  • 1/3 c
    flaked coconut
  • 1/3 c
    chopped nuts ; pecans or walnuts
  • FILLING :

  • 3/4 c
    flaked coconut
  • 1/2 c
    chopped nuts ; pecans or walnuts
  • 1/2 c
    brown sugar, firmly packed
  • 2 Tbsp
    flour
  • 2 tsp
    cinnamon
  • GLAZE :

  • 1 c
    powdered sugar
  • 1 Tbsp
    butter, room temperature
  • 2 to 3 Tbsp
    milk

How to Make Coconut Streusel Spice Cake

Step-by-Step

  1. Grease and flour a 12 cup Bundt ban or a 10" tube pan.( I use the can spray already mixed together ).
  2. In a large mixing bowl combine the cake mix , eggs , milk and butter . Using an electric mixer on low speed mix until its all blended together. Fold in the measured coconut and nuts for the cake.
  3. Pour 1/2 the batter in the prepared bundt pan.
  4. In a small mix up the ingredients for the filling ; Sprinkle 1 cup of the filling on top of the cake in the bundt pan ; Reserve 1/2 cup filling for top of cake.
  5. Cover filling with the remaining cake batter and then sprinkle the reserved filling mixture on top.
  6. Bake @ 350° for 45-55 minutes or until done.
  7. COOL CAKE UPRIGHT IN PAN FOR 30 MINUTES AND THEN INVERT PAN AND REMOVE CAKE FROM THE PAN.COOL COMPLETELY.
  8. In a small mixing bowl mix up the glaze ingredients until you achieve a drizzle consistency icing ; drizzle over the top and down the sides of the cake.
