FOR THE BATTER :

1/2 c
scalded milk
1 tsp
butter
2
eggs
1 c
sugar
1 c
flour
pinch
salt
1 tsp
baking powder

FOR THE TOPPING :

5 Tbsp
brown sugar
3 Tbsp
butter
2 Tbsp
cream
shredded fresh coconut

How to Make Coconut Sponge Cake

Step-by-Step

  • 1Scald the milk and add butter.
  • 2Beat eggs well in a mixing bowl and add sugar and mix.
  • 3Sift together : flour , salt , baking powder ; Add to the egg mixture ; Add the milk and butter last.
  • 4Pour into a ungreased layer pan.
  • 5Bake @ 325° for 35 minutes.
  • 6For the topping : Warm together brown sugar , butter and cream. Spread on hot cake and sprinkle with fresh coconut and return to the oven for 5 minutes ; Serve Warm.
