Ingredients
- FOR THE BATTER :
- 1/2 cup scalded milk
- 1 teaspoon butter
- 2 - eggs
- 1 cup sugar
- 1 cup flour
- pinch salt
- 1 teaspoon baking powder
- FOR THE TOPPING :
- 5 tablespoons brown sugar
- 3 tablespoons butter
- 2 tablespoons cream
- - shredded fresh coconut
How To Make coconut sponge cake

Step 1Scald the milk and add butter.

Step 2Beat eggs well in a mixing bowl and add sugar and mix.

Step 3Sift together : flour , salt , baking powder ; Add to the egg mixture ; Add the milk and butter last.

Step 4Pour into a ungreased layer pan.

Step 5Bake @ 325° for 35 minutes.

Step 6For the topping : Warm together brown sugar , butter and cream. Spread on hot cake and sprinkle with fresh coconut and return to the oven for 5 minutes ; Serve Warm.
