Ingredients

  • FOR THE BATTER :

  • 1/2 c
    scalded milk
  • 1 tsp
    butter
  • 2
    eggs
  • 1 c
    sugar
  • 1 c
    flour
  • pinch
    salt
  • 1 tsp
    baking powder
  • FOR THE TOPPING :

  • 5 Tbsp
    brown sugar
  • 3 Tbsp
    butter
  • 2 Tbsp
    cream
  • ·
    shredded fresh coconut

How to Make Coconut Sponge Cake

Step-by-Step

  1. Scald the milk and add butter.
  2. Beat eggs well in a mixing bowl and add sugar and mix.
  3. Sift together : flour , salt , baking powder ; Add to the egg mixture ; Add the milk and butter last.
  4. Pour into a ungreased layer pan.
  5. Bake @ 325° for 35 minutes.
  6. For the topping : Warm together brown sugar , butter and cream. Spread on hot cake and sprinkle with fresh coconut and return to the oven for 5 minutes ; Serve Warm.
