This is a great coconut cake by Aunt Caroline use to make. She was one of my favorites.

Ingredients
- 3 sticks margarine
- 3 cups sugar
- 6 - eggs
- 1 cup evaporate milk
- 3 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons lemon extract
- 1 can coconut (1 1/3 cups)
How To Make coconut pound cake

Step 1Preheat oven to 350 degrees 1. Have eggs and margarine at room temperature. 2. Sift flour, baking powder and salt in bowl-set aside. 3. In a large bowl cream margarine, add sugar, eggs one at a time. Mix thoroughly after each egg. Add flour mixture to creamed mixture alternating with one cup milk, blend well. Add coconut and extract. 4. Bake for 1 hour and 20 minutes
