My mother in law loved this cake. She has passed on now. Makes me think of her every time I make it

Ingredients

  • 2 sticks butter or margarine
  • 1/2 cup crisco
  • 3 cups sugar
  • 5 - eggs
  • 1 cup milk
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup coconut
  • 1 teaspoon coconut extract

How To Make coconut pound cake

  • Step 1
    Cream butter sugar crisco and cocnut extract. Add eggs one at a time and beat until fluffy.Mix flour salt and baking powder well. Alternate flour and milk with the creamed mixture. Fold in coconut. Put cake in cold oven @350 and bake for 1hr. and 15 minutes. (I use a bundt pan but you can also use a loaf pan)
  • Step 2
    Combine 1 cup sugar 1/2 cup water and 1 teaspoon coconut extract. Bring to boil and boil for 1 minute. Pour over cake while still warm
