This recipe come's from the grandmother of my two oldest daughter's she has had it in the family for year's. This is a family favorite and has been for year's. Especially when you have been to the river for the day or you have been riding four wheeler's all day. Or even horseback riding. Grandma Millie alway's has the coconut pound cake, after a long day of play. She is the Best!

Ingredients

  • 2 sticks butter, softened
  • 1/3 cup shortening
  • 3 cups sugar
  • 5 - eggs
  • 3 cups flour
  • 1/2 teaspoon baking powder
  • 1 cup sour cream
  • 1/4 cup milk
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla
  • 1 cup coconut
  • - pinch of salt

How To Make coconut pound cake

  • Step 1
    Cream shortening, Butter, and sugar until fluffy.
  • Step 2
    Add one agg at a time. Beat well after each one. Combine dry ingredients. Add creamed mixture with lemon, vanilla, sour cream, and milk. Beat well. Add coconut mix lightly. Mixture will be slightly thick spoon into bundt pan. Bake at 325 drgree for 1 1/2 hours. Icing the cake with 1/2 bag of powdered sugar, 1 cap full of vanilla and 4 tablespoons of butter mix together well with a couple of teaspoons of milk and drizzle Very Good Recipe
