  • 2 - eggs
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 can pineapple, crushed with juice
  • 1/2 cup chopped walnuts
  • 1 package cream cheese, room temperature
  • 1/2 cup butter, softened
  • 2 cups confectioners' sugar
  • 1 cup coconut, flaked

How To Make coconut pineapple cake

  • Step 1
    Preheat oven to 350...In large bowl, beat the eggs, sugar and vanilla until fluffy. Combine the flour, soda, powder and salt into eggs and add pineapples and walnuts Pour into a greased 13x9 in baking pan. Bake on 350---35-40 min. until center comes out clean with toothpick. Lt cake cool completely. In a small bowl, beat cream cheese, butter and confectioners sugar until smooth....sprink with coconut and enjoy....Store in refrigerator.
