coconut oatmeal cake
I love checking out tea rooms and small cafes ... and have found some of the most amazing dishes. This recipe was a surprise as Oatmeal Cake is rarely found on a menu; couldn't wait to get home to try it for myself. Easy to make, and yummy to eat !!

Ingredients
- 1 cup rolled oats (not instant)
- 1-1/4 cup boiling water
- 8 tablespoons unsalted butter,slightly softened
- 1/2 cup sugar
- 1 cup brown sugar
- 2 - eggs
- 1 teaspoon vanilla
- 1-1/2 cup flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- TOPPING:
- 1 cup shredded coconut, packed
- 5 ounces butter
- 2/3 cup brown sugar
- 1/4 cup light cream
- 2/3 cup walnuts, chopped
How To Make coconut oatmeal cake

Step 1Preheat oven to 350. Lightly butter 9" round cake pan.

Step 2Place oats in a bowl. Add bowling water and let stand 20 minutes.

Step 3Cream butter and sugars. Add eggs and vanilla and stir well. Add rolled oats. Add dry ingredients.

Step 4Pour batter into cake pan. Bake 40 minutes, or until toothpick comes out clean.

Step 5TOPPING: On a cookie sheet, spread out coconut and bake until golden brown - about 4 minutes. Cream butter and then add brown sugar. Stir in cream, nuts and coconut. Spread on cooled cake.
