I love checking out tea rooms and small cafes ... and have found some of the most amazing dishes. This recipe was a surprise as Oatmeal Cake is rarely found on a menu; couldn't wait to get home to try it for myself. Easy to make, and yummy to eat !!

Ingredients

1 c
rolled oats (not instant)
1-1/4 c
boiling water
8 Tbsp
unsalted butter,slightly softened
1/2 c
sugar
1 c
brown sugar
2
eggs
1 tsp
vanilla
1-1/2 c
flour
1 tsp
baking soda
1 tsp
cinnamon
1/4 tsp
nutmeg
1/2 tsp
salt

TOPPING:

1 c
shredded coconut, packed
5 oz
butter
2/3 c
brown sugar
1/4 c
light cream
2/3 c
walnuts, chopped

How to Make COCONUT OATMEAL CAKE

Step-by-Step

  • 1Preheat oven to 350. Lightly butter 9" round cake pan.
  • 2Place oats in a bowl.
    Add bowling water and let stand 20 minutes.
  • 3Cream butter and sugars.
    Add eggs and vanilla and stir well.
    Add rolled oats.
    Add dry ingredients.
  • 4Pour batter into cake pan.
    Bake 40 minutes, or until toothpick comes out clean.
  • 5TOPPING:
    On a cookie sheet, spread out coconut and bake until golden brown - about 4 minutes.
    Cream butter and then add brown sugar. Stir in cream, nuts and coconut.
    Spread on cooled cake.
