How to Make Coconut Mist Cake

Step-by-Step

  1. Preheat oven to 325 degrees.
Grease and flour whatever pan you decided to use.
  2. Cream butter, sugar, and egg yolks.
Beat well, milk, flour, salt, baking powder, and coconut.
    Mix into butter mixture.
Fold in stffly beaten egg whites gently.
  3. Pour batter into prepared baking pan.
Bake at 325 degrees for 40 to 45 minutes.
  4. Allow cake to cool completely.
I ice this with a mixture of 1/3 sour cream, 1/3 confectioners' sugar, and a small tub of cool whip whipped topping, mix together. Then I hand apply shredded sweetened coconut to sides and top.

I sometimes make this cake into a layer cake. When I do I use a can of prepared fruit pie filling for a filling between the layers - my favorite is lemon pie filling. ENJOY!!
