coconut lime cake/cupcake
A friend of mine requested the best of the best coconut cakes one year for his birthday...I went in search and found this one by Paula Deen. I did tweak a couple things, but over all it's so yummy!!! You'll love it!!! Giving a medium, not hard to make, just time consuming and slighty putsy. :)

Ingredients
- 1 cup butter, softened
- 2 cups sugar
- 1 tablespoon coconut oil
- 4 - eggs
- 2 1/2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup coconut milk
- - glaze:
- 1/2 cup sour cream
- 1/2 cup sugar
- 1 - lime zested, and juiced
- 2 tablespoons coconut milk
- - frosting:
- 1/2 cup butter, softened
- 8 ounces cream cheese
- 1 pound plus 1 cup powered sugar
- 1/3 cup coconut milk
- 1 teaspoon vanilla
- 2-3 cups coconut, toasted
- - lime zest curls
How To Make coconut lime cake/cupcake

Step 1Preheat oven to 350...grease and flour 2 - 9" cake pans. Or line cupcake pans with 24 cupcake liners.

Step 2Cream together butter and sugar until fluffy. Add coconut oil and eggs 1 at a time, mixing after each addition. In a separte bowl combine flour, salt, soda and powder. Add coconut milk and flour to creamed mixture alternately, beginning and ending with flour. Pour batter into prepared pans or fill cupcake liners 2/3 full and bake cakes 25-30 minutes. Allow to cool 10 then remove from pans. Cupcakes, bake 15-18 minutes, allow to cool 10 minutes remove from pans and place on cooling racks.

Step 3When cakes are cool...mix glaze. In a medium bowl combine sour cream, sugar, lime zest and juice and coconut milk. With straw or bamboo skewer, poke holes in cakes and spread glaze over top and on sides of cake, just on top of cupcakes. cover with plastic wrap and chill until ready to frost, or at least one hour.

Step 4Frosting...mix together butter and cream cheese until well blended and fluffy. Add powdered sugar gradually. Beat in coconut milk and vanilla.

Step 5For cake, place one cake layer on plate, top with frosting, layer 2nd layer on top, cover sides and top with frosting...press toasted coconut into top and sides of cake.

Step 6Cupcakes, frost each cupcake and press into toasted coconut.

Step 7Garnish with lime zest curls if desired.
