I kind of combined ingredients from a couple of favorite cake recipes to come up with my own moist, delicious coconut cake. A favorite now, requested often.

Ingredients

1 box
yellow cake mix, no pudding
4
eggs
1/2 c
canola oil
1 box
instant coconut pudding
1 small
bag sweetened coconut
1 tsp
coconut flavoring
1 1/2 c
sour cream

GLAZE

2 c
sugar
1/2 c
water
1 tsp
coconut flavoring

How to Make Coconut Cream Pound Cake

Step-by-Step

  • 1Blend first four ingredients with hand mixer. Add flavoring. Stir in coconut by hand. Swirl in sour cream just until blended. Pour in greased tube pan. Bake 1 hour @ 350 degrees.
  • 2Glaze: Boil sugar and water 1 minute. Remove from heat, add flavoring. Pour over warm cake.
