  • 1 pkg
    yellow cake mix
  • 1 pkg
    vanilla instant pudding, 3.5oz box can use coconut cream pudding
  • 1 1/3 c
  • 4 large
  • 1/4 c
    vegetable oil
  • 2 c
    flaked coconut
  • 1 c
    chopped nuts, pecans or walnuts
  • ·
    coconut frosting
  • 2 Tbsp
    butter or margarine
  • 2 c
    flaked coconut
  • 2 Tbsp
  • 3 1/2 c
    confectioners' sugar
  • 1/2 tsp
    vanilla extract
  • 1 pkg
    cream cheese, 8 oz softened

How to Make Coconut Cake


  1. Preheat oven to 350 degrees. Grease and flour a 13x9 baking pan.
  2. Blend cake mix, pudding mix, water, eggs. and oil in a large mixing bowl. Beat a medium speed for 4 minutes or until batter is well blended. Stir in coconut and chopped nuts. Pour into prepared pan and bake for 30 to 35 minutes. Frost cake when completely cooled.
  3. Coconut frosting.
  4. Cream butter with the cream cheese. Add the milk and confectioners' alternately, beating well. Add vanilla and stir in 1 3/4 cups coconut.
  5. Frost completely cooled cake. Sprinkle with remaining coconut.
