Ingredients

  • 1 package yellow cake mix
  • 1 package vanilla instant pudding, 3.5oz box can use coconut cream pudding
  • 1 1/3 cups water
  • 4 large eggs
  • 1/4 cup vegetable oil
  • 2 cups flaked coconut
  • 1 cup chopped nuts, pecans or walnuts
  • - coconut frosting
  • 2 tablespoons butter or margarine
  • 2 cups flaked coconut
  • 2 tablespoons milk
  • 3 1/2 cups confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 1 package cream cheese, 8 oz softened

How To Make coconut cake

  • Step 1
    Preheat oven to 350 degrees. Grease and flour a 13x9 baking pan.
  • Step 2
    Blend cake mix, pudding mix, water, eggs. and oil in a large mixing bowl. Beat a medium speed for 4 minutes or until batter is well blended. Stir in coconut and chopped nuts. Pour into prepared pan and bake for 30 to 35 minutes. Frost cake when completely cooled.
  • Step 3
    Coconut frosting.
  • Step 4
    Cream butter with the cream cheese. Add the milk and confectioners' alternately, beating well. Add vanilla and stir in 1 3/4 cups coconut.
  • Step 5
    Frost completely cooled cake. Sprinkle with remaining coconut.
