My mom used to make this "coke cake" when I was a little girl. I found the recipe recently and it was just as my mama used to make!

Ingredients

  • ·
    ingredients for cake
  • 2 c
    all purpose flour
  • `1 1/2 c
    small marshmallows
  • 1/2 c
    butter or margarine
  • 1/2 c
    vegetable oil
  • 3 Tbsp
    unsweetend cocoa powder
  • 1 c
    coca cola (i've used 7-up also)
  • 1 tsp
    baking soda
  • 1/2 c
    buttermilk
  • 2
    eggs
  • 1 tsp
    vanilla extract
  • 2 c
    sugar
  • ·
    ingredients for the frosting
  • 1/2 c
    butter
  • 3 Tbsp
    unsweetened cocoa
  • 6 Tbsp
    coca-cola
  • 1
    16oz box confectioner's sugar
  • 1 tsp
    vanilla extract
  • 1 c
    chopped pecans

How to Make Coca Cola Cake

Step-by-Step

  1. Directions for making the cake: Preheat over to 350*
  2. In large mixing bowl, sift sugar & flour; add marshmallows

    In sauce pan, mix butter, oil, cocoa and cola. Bring to a boil and pour over dry ingredients, blend well.
  3. Dissolve baking soda in buttermilk, then along with the eggs and vanilla extract, add to cake batter.
  4. Pour into well greased 9x13 pan for 35-45min. Remove from oven and frost immediately
  5. DIRECTIONS FOR FROSTING
  6. Place confectioner's sugar in a large bowl.

    In sauce pan, combine butter, cocoa and cola. Bring to a boil and pour over confectioner's sugar. Blend well.
  7. Add vanilla extract and pecans. Spread over hot cake. Frosting will melt into cake but will also make a fudgey topping over the cake also.
  8. Cool then cut into squares and serve alone or with ice cream.
