Ingredients

  • 6 ounces butter, softened
  • 2 - clementines
  • 3/4 cup sugar
  • 3 - eggs, beaten lightly
  • 1 1/4 cups self rising flour
  • 1/3 cup ground almond
  • 3 tablespoons heavy cream
  • GLAZE AND TOPPING:
  • 6 tablespoons clementine juice
  • 2 tablespoons sugar (glaze)
  • 3 tablespoons sugar (topping

How To Make clementine cake

  • Step 1
    Preheat oven to 350*. Grease 7" pan and baseline with parchment paper.
  • Step 2
    Peel the rind from the clementines and chop it finely (i used 3 clementines and a peeler). In a bowl, cream the butter, sugar, and clementine rind together until pale and fluffy.
  • Step 3
    Gradually add the beaten eggs to the batter beating thoroughly after each addition
  • Step 4
    Gently fold in the flour, almond, and cream. Spoon the batter into the prepared pan
  • Step 5
    Bake in oven for 55-60 minutes or until a toothpick inserted in center comes out clean. Let cool slightly
  • Step 6
    Meanwhile, make the glaze. Put the clementine juice into a small pan with sugar. Bring to a boil over a low heat and simmer for 5 minutes.
  • Step 7
    Turn out the cake onto a wire rack. Drizzle the glaze over the cake until it has been absorbed and sprinkle with sugar. Let cool.
