Ingredients
- 6 ounces butter, softened
- 2 - clementines
- 3/4 cup sugar
- 3 - eggs, beaten lightly
- 1 1/4 cups self rising flour
- 1/3 cup ground almond
- 3 tablespoons heavy cream
- GLAZE AND TOPPING:
- 6 tablespoons clementine juice
- 2 tablespoons sugar (glaze)

How To Make clementine cake

Step 1Preheat oven to 350*. Grease 7" pan and baseline with parchment paper.

Step 2Peel the rind from the clementines and chop it finely (i used 3 clementines and a peeler). In a bowl, cream the butter, sugar, and clementine rind together until pale and fluffy.

Step 3Gradually add the beaten eggs to the batter beating thoroughly after each addition

Step 4Gently fold in the flour, almond, and cream. Spoon the batter into the prepared pan

Step 5Bake in oven for 55-60 minutes or until a toothpick inserted in center comes out clean. Let cool slightly

Step 6Meanwhile, make the glaze. Put the clementine juice into a small pan with sugar. Bring to a boil over a low heat and simmer for 5 minutes.

Step 7Turn out the cake onto a wire rack. Drizzle the glaze over the cake until it has been absorbed and sprinkle with sugar. Let cool.
