I got this recipe from my mom. I take this cake to church events and to work and it is always it a hit! I always have the simple ingredients on hand in case I need a cake in a pinch.

Ingredients

  • 1
    yellow cake mix (without pudding)
  • 2/3 c
    canola oil
  • 4
    eggs
  • 1 c
    buttermilk
  • 1/4 c
    sugar
  • 2/3 c
    brown sugar, firmly packed
  • 1 1/4 Tbsp
    cinnamon
  • 3/4 c
    powdered sugar
  • 2 Tbsp
    lemon juice

How to Make Cinnamon Streusel Cake

Step-by-Step

  1. Combine cake mix, oil, eggs, buttermilk and sugar. Beat 2 minutes. Pour half of the batter in a greased/floured 13x9 baking dish.
  2. Combine brown sugar and cinnamon.
  3. Sprinkle half of the sugar-cinnamon mixture over batter.
  4. Pour remaining cake batter into pan.
  5. Top with remaining sugar-cinnamon mixture.
  6. Draw a knife through the batter to make a swirl design.
  7. Bake 40 minutes at 325.
  8. Combine powdered sugar and lemon juice. Drizzle over warm cake.
  9. Note: Most of the time, I use Saco Buttermilk powder instead of fresh buttermilk. 4 Tablespoons of powder plus one cup of water.
