If you have fresh zucchini, this is an excellent way to use it. It serves several and is sure to be a crowd pleaser. Easy for a family reunion or any special occasion.

Ingredients

  • 3/4 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 - eggs
  • 1 teaspoon vanilla
  • 1 3/4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 2 cups zucchini, grated
  • 2 cups powdered sugar (this is the frosting)
  • 1 teaspoon cinnamon
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 2 tablespoons milk

  • Step 1
    Cream 3/4 cup butter, 1/2 cup sugar, and 1/2 cup brown sugar. Add eggs and 1 tsp. vanilla. Mix in flour, 1 tsp. cinnamon and baking powder. Blend in zucchini.
  • Step 2
    Pour into greased jelly roll pan and bake at 350 degrees for 25 - 30 minutes. While baking, prepare the frosting.
  • Step 3
    Frosting: Mix the 2 cups powdered sugar, cinnamon, melted butter, vanilla, and milk. Mix until creamy. Add additional milk, if necessary, to get desired consistency. Cool zucchini bars and frost. Cut into squares. ENJOY!!!
