My neighbor, Cindy, would make this cake every year for my husband. He LOVED this cake. She told me if I could guess the main ingredients that she would give me the recipe. She would put black walnuts in the cake, so it would be hard for me to enjoy it, since i do not like black walnuts. One month, when I was in Shreveport Louisiana working, I called her and PLEADED for the recipe to make it for my co-workers. With the substitution of English Walnuts, I loved the cake. Now my husband gets this cake with English Walnuts and he likes it just as well. I think He and Cindy were just trying to keep me out of the cake!!!! Hence the name of Cindy's Secret Apple Cake.

Ingredients

  • 4 cups peeled, sliced cooking apples
  • 2 cups white sugar
  • 2 - large eggs
  • 1/2 cup cooking oil
  • 2 teaspoons vanilla extract
  • 2 cups sifted all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 cup chopped walnuts

How To Make cindy's secret apple cake

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Combine apples and sugar; set aside.
  • Step 3
    In a large mixing bowl, mix eggs, oil and vanilla.
  • Step 4
    Beat for one minute at medium speed.
  • Step 5
    Combine dry ingredients and add to egg mixture, alternating with apple mixture.
  • Step 6
    Mix until apples are thoroughly covered. Stir in walnuts.
  • Step 7
    Spread into a greased and floured 9"x13"x3" pan.
  • Step 8
    Sprinkle with topping recipe (follows). APPLE WALNUT CAKE TOPPING: 1/2 c. light brown sugar 2 tbsp. regular flour 2 tsp. cinnamon 2 tbsp. cooking oil 1/2 c. finely chopped nuts Combine all ingredients with a fork. Sprinkle on batter.

    Bake at 350 degrees for 45 to 50 minutes or until cake tests done with a toothpick
  • Step 10
    Do Not Under bake.
