"churro" mug cake
Sometimes a gluten-free/sugar-free girl just has to treat herself to a quick lil' snack cake... I adapted different mug cake recipes I'd tried to taste the way I liked.

Ingredients
- 1 tablespoon coconut oil (melted)
- 1 tablespoon honey
- 1/4 teaspoon mexican vanilla
- 1/8 teaspoon kosher salt (or just a pinch)
- 1/4 teaspoon ground cinnamon
- 1 egg
- 1/3 cup almond flour
How To Make "churro" mug cake

Step 1Stir all ingredients except almond flour into a large mug until well blended.

Step 2Mix in almond flour.

Step 3Microwave 2 minutes on "high" (adjust for your particular model)

Step 4Turn out onto plate (or eat straight from mug, if you wish)

Step 5Enjoy with your favorite hot (or iced) beverage!
