I enjoy baking one of these in various flavors every Christmas. Serve this on your favorite china or silver, to really embrace the elegant Christmas spirit. Will that be two cubes or one in your coffee or tea?

Ingredients

  • 3/4 cup flour
  • 1/2 cup almond meal
  • 1 cup dark brown sugar
  • 1 - egg
  • 3 tablespoons dark molasses
  • 1 cup cream
  • 1/4 cup oil
  • 1 tablespoon cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon allspice, ground
  • 1 tablespoon baking soda
  • 1 pinch kosher salt
  • 1 tablespoon orange extract
  • 1 tablespoon orange zest
  • 1/2 cup dark chocolate morsels
  • 1/8 cup cranberries, dried
  • 1/8 cup currants, dried
  • 1/4 cup whole almonds, blanched
  • - apricot jam
  • - boysenberry, raspberry, or blueberry jam
  • - colored sugar crystals, optional
  • - powdered sugar

How To Make christmas jam torte - chocolate winterberry almond

  • Step 1
    Mix the first 14 ingredients in a mixing bowl. Blend well.
  • Step 2
    Then fold in berries, chocolate, and almonds.
  • Step 3
    Pour half the batter into a tin sprayed with Baker's Joy.
  • Step 4
    Then spread alternately stripes of apricot and boysenberry jam, keeping a half an inch from the edge of the pie.
  • Step 5
    Pour the rest of the batter atop.
  • Step 6
    Bake at 325F until cooked throughout, about 20 minutes.
  • Step 7
    Wait about 10-15 minutes, then remove from tin onto cake stand.
  • Step 8
    Optionally sprinkle with powdered sugar.
