Dates are used to add moisture to the cake. Dried pineapple, papaya, cherries, can replace some of the dried fruit. If cake looks to be browing too quickly lay a piece of baking paper across the top of the tin but avoid contact with the cake mix.

Ingredients

  • 125 grams butter
  • 1 cup white sugar
  • 800 grams mixed dried fruit
  • 200 grams chopped dates
  • 1/2 cup sherry
  • 1 teaspoon mixed spice
  • 1/2 teaspoon ginger
  • pinch - nutmeg
  • 1 teaspoon baking soda
  • 2 tablespoons golden syrup
  • 2 - eggs
  • 225 grams flour
  • 1/2 teaspoon baking powder
  • - chopped nuts (optional)

How To Make christmas fruit cake

  • Step 1
    Line a 20cm square cake tin with two layers of baking paper (or use butter wrapper or brown paper for bottom layer)
  • Step 2
    Pour 1 cup strong tea over the mixed fruit (not dates) & microwave for 5 minutes. Stirring half way through. Add butter, sugar, dates. sherry, spices, baking soda & syrup. Microwave 2 minutes. Stir. Allow to cool fully (at least an hour or better overnight).
  • Step 3
    Beat eggs until creamy. Stir through cooled fruit mixture. Sift dry ingredients, fold into fruit mix adding some chopped nuts if desired.
  • Step 4
    Spoon mix into tin. Bake at 150C for 1 hour then at 125 for 2 hours or until cooked when tested with a skewer.
