Dried pineapple, papaya, cherries, can replace some of the dried fruit.
If cake looks to be browing too quickly lay a piece of baking paper across the top of the tin but avoid contact with the cake mix.

Ingredients

125 gbutter

1 cwhite sugar

800 gmixed dried fruit

200 gchopped dates

1/2 csherry

1 tspmixed spice

1/2 tspginger

pinchnutmeg

1 tspbaking soda

2 Tbspgolden syrup

2eggs
-
225 gflour
-
1/2 tspbaking powder

·chopped nuts (optional)
How to Make Christmas Fruit Cake
- Line a 20cm square cake tin with two layers of baking paper (or use butter wrapper or brown paper for bottom layer)
- Pour 1 cup strong tea over the mixed fruit (not dates) & microwave for 5 minutes. Stirring half way through. Add butter, sugar, dates. sherry, spices, baking soda & syrup. Microwave 2 minutes. Stir. Allow to cool fully (at least an hour or better overnight).
- Beat eggs until creamy. Stir through cooled fruit mixture. Sift dry ingredients, fold into fruit mix adding some chopped nuts if desired.
- Spoon mix into tin. Bake at 150C for 1 hour then at 125 for 2 hours or until cooked when tested with a skewer.
