chris' pennsylvania dutch applesauce cake

For as long as I can remember, my mom, who many considered the best cook in my hometown of Rochester, NY, made this delicious, moist cake. Everyone loved it. It is easy, easy, easy and best of all I can make it in a pinch because the ingredients are always on hand. It was and is my ultimate comfort food--simply delicious warm or cold. I hope it becomes one of your favorites as well.

Ingredients
- 1/2 cup butter
- 1 cup brown sugar, firmly packed
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 cup applesauce, unsweetened
- 1 cup raisins

Step 1Preheat oven to 350. Generously grease a 6 x 10 cake pan.

Step 2In medium bowl, sift or whisk together flour with salt, cinnamon, cloves, nutmeg and baking soda. Set aside.

Step 3With mixer, cream together butter with brown sugar until fluffy.

Step 4With mixer on low, add sifted dry ingredients alternately with the applesauce to the creamed mixture.

Step 5Remove from mixer. Stir in raisins. I use a heaping cup.

Step 6Bake 35 minutes (check after 30--if toothpick cimes out with moist crumbs or clean it's done).
