chocolate zuchinni bread / cake

Gotta eat your Veggies, but I like mine warmed with vanilla ice cream and hot fudge sauce :) oh no. anyway, this is my favorite tried and true recipe I have been making for 30 years.

Ingredients
- 2 1/2 cups all purpose flour
- 1/2 cup cocoa powder
- 2 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups zucchini, coursely shredded
- 1/2 cup milk
- 3/4 cup butter, softened
- 2 cups sugar
- 3 large eggs
- 2 teaspoons vanilla extract (always pure)
- 1 teaspoon cinnamon
- 2 teaspoons orange peel, ( fresh is best) opt.
- 1 cup nuts, raisins. opt.......
How To Make chocolate zuchinni bread / cake

Step 1Heat oven to 350*. Beat together the butter and sugar until smooth and blended. Add eggs one at a time, beating well after each addition. Stir in vanilla, orange peel (opt),and zucchini. Alternately stir dry ingredients and milk into zucchini mixture, including nuts in last addition.

Step 2Pour batter into greased and floured loaf pans (2) or a 10" tube or bundt pan. Bake 350 for 1 hour or until pick comes out clean. Cool in pan for 15 minutes or so; turn out on wire rack to cool

Step 3You can Glaze with, 2 cups powdered sugar, 3 tbsp. milk and 1 teas. Vanilla. Beat until smooth. OR slice a piece and warm in microwave a few seconds or hot out of the oven. Top with a scoop of Vanilla ice cream and chocolate sauce. I know, me bad, but its just too good. enjoy. xoxoxoxo
