Ingredients

2 cgrated zucchini

1 1/2 csugar

3/4 coil

2 cplain flour
-
1/3 ccocoa
-
1/2 cchopped nuts ( pecans or walnuts)

1 1/2 tspbaking soda

2 tsppure vanilla extract

FROSTING:
-
4 Tbspbutter
-
1/4 cmilk
-
1/2 cminiature marshmallows
-
1/2 cchopped nuts
-
1 csugar
-
1/2 cchocolate chips ( semi-sweet)
-
1 tsppure vanilla extract
How to Make Chocolate Zucchini Brownies
- For the Brownies, combine the grated zucchini, sugar, oil and vanilla. Mix the flour, baking soda and cocoa. Add to the zucchini mixure. Add the chopped nuts. Pour into a 9x13 jelly roll pan and bake at 350 degrees for about 35-40 minutes Let cool before frosting.
- Frosting:
Melt butter over medium heat in a saucepan. Add sugar and milk. Bring to a boil , stirring frequently. Cook and stir about 1 minute. Remove from heat. Add chocolate chips and marshmallows. Stir until melted. Add vanilla and stir.
Spread icing over brownies and top with chopped nuts.
