chocolate zucchini brownies

I found this recipe just at the right time! My garden was overflowing with zucchini. It has become a family favorite and it works great to make the brownie layer when you have so many zucchini that you don't know what to do, freeze it and bring it out later to frost for a quick dessert . Great for church dinners, or when the kids show up unannounced! Trust me , this will quickly become a favorite for your family also.

Ingredients

  • 2 cups grated zucchini
  • 1 1/2 cups sugar
  • 3/4 cup oil
  • 2 cups plain flour
  • 1/3 cup cocoa
  • 1/2 cup chopped nuts ( pecans or walnuts)
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons pure vanilla extract
  • FROSTING:
  • 4 tablespoons butter
  • 1/4 cup milk
  • 1/2 cup miniature marshmallows
  • 1/2 cup chopped nuts
  • 1 cup sugar
  • 1/2 cup chocolate chips ( semi-sweet)
  • 1 teaspoon pure vanilla extract

How To Make chocolate zucchini brownies

  • Step 1
    For the Brownies, combine the grated zucchini, sugar, oil and vanilla. Mix the flour, baking soda and cocoa. Add to the zucchini mixure. Add the chopped nuts. Pour into a 9x13 jelly roll pan and bake at 350 degrees for about 35-40 minutes Let cool before frosting.
  • Step 2
    Frosting: Melt butter over medium heat in a saucepan. Add sugar and milk. Bring to a boil , stirring frequently. Cook and stir about 1 minute. Remove from heat. Add chocolate chips and marshmallows. Stir until melted. Add vanilla and stir. Spread icing over brownies and top with chopped nuts.
