Ingredients
- WHOOPIE PIE:
- 1 box cake mix, devils food
- 1 lg box chocolate fudge instant pudding, dry
- 1/2 cup butter, melted
- 1/2 cup water
- 3 large eggs
- 2 teaspoons sea salt
- FILLING:
- 1 cup butter, room temperature
- 3 1/2 cups confectioners' sugar
- 1/3 cup caramel ice cream topping
- 1 teaspoon sea salt
- 1 teaspoon pure vanilla extract
How To Make chocolate whoopie pies w/ salted caramel filling

Step 1Combine cake mix, pudding, 1/2 C melted butter, water & eggs in large bowl; stir gently to combine. Let batter rest for 30 minutes.

Step 2Preheat oven to 400 degrees F. Drop batter by slightly rounded tsp, 2" apart, onto parchment lined or lightly greased cookie sheets. Sprinkle each cookie with sea salt. Bake for 5 - 7 minutes or until toothpick inserted in center comes out clean. Transfer to wire cooling rack.

Step 3Place 1 C butter in medium bowl. Beat at medium speed until creamy. Reduce speed to low; gradually add powdered sugar. Beat until well mixed. Add caramel sauce, 1 tsp sea salt & vanilla. Beat until well mixed.

Step 4Pipe or spread rounded tsp filling onto bottom of 1 cookie; place second cookie, bottom side down over filling. Repeat with remaining cookies & filling.

Step 5MAKE AHEAD TIPS: To make ahead, bake cookies as directed. Cool completely. Place cooled cookies in single layer in resealable plastic freezer bags. Freeze up to 2 months. Let stand at room temperature until thawed. Prepare filling & fill cookies as directed.
