chocolate velvet cupcakes w cream cheese icing

I took these to a birthday party and they were a big hit. The cream cheese icing on the top makes them special. If you love the icing you might want to double the ingredients.

Makes 24-30 cupcakes depending on size.
Ingredients
- 1 - swiss or german chocolate cake mis
- 1 - 3 oz packsage instant choclate pudding
- 1 cup semi-sweet chocolate chips
- 4 - large eggs
- 1/2 cup - water
- 1/2 cup - vegetable or canola oil
- 1 cup sour cream
- 2 teaspoons pure vanilla extract
- 1 - 8 oz package cream cheese,softened
- 1/2 cup butter,softened
- 1 - 16 oz package confectioners sugar
- 1 teaspoon pure vanilla extract
- 1 cup mini chocolate chips (for garnish)

Step 1Preheat oven to 350. Line 24-30 regular size muffin tins with paper liners.

Step 2In a large bowl combine cake mix.pudding mix and chocolate chips. In another bowl beat the eggs and then combine with the water,oil,sour cream and vanilla extract.Stir into the dry mixture until just combined.

Step 3Scoop the mixture into prepared muffin tins and bake at 350 for about 25-39 minutes. Mixture may still appear a little wet . Do not over bake.

Step 4For the icing combine the softened cream cheese and butter with the powdered sugar and vanilla in an electric mixer. Spread or pipe the icing cupcakes after they have cooler. Sprinkle tops with min chocolate chips.
