Very good and moist. It has a nice light chocolate taste and the frosting is just perfect for the topping. Don't let the mayonnaise fool ya. My mom made this one time and I was hooked, so I now make it.

Ingredients

  • 2 cups all purpose flour
  • 1 cup sugar
  • 3 tablespoons baking cocoa
  • 2 teaspoons baking soda
  • 1 cup water
  • 1 cup mayonnaise
  • 1 teaspoon vanilla extract
  • 1/4 cup butter or margarine
  • 1/2 cup brown sugar, firmly packed
  • 2 tablespoons milk
  • 1 3/4 cups sifted confectioners sugar

How To Make chocolate mayonnaise cake

  • Step 1
    In a large bowl, combine flour, sugar, cocoa and baking soda (you may want to use less baking soda about 1 1/2 tsp.) Add water, mayonnaise and vanilla: beat at medium speed until thoroughly combined.
  • Step 2
    Pour into greased 9" square or 11"x7"x2" baking pan. Bake at 350 degrees F for 30-35 minutes or until cake tests done. Cool completely.
  • Step 3
    FOR FROSTING: Melt butter in a saucepan. Stir in brown sugar; cook and stir until bubbly.
  • Step 4
    Remove from the heat and stir in milk. Gradually add confectioners sugar; beat by hand until frosting is of spreading consistency. Immediately frost cake.
