chocolate fudge cake

This is a quick and easy family favourite I learnt from my mum. I made it for a school bake sale and someone asked if I would take orders, and this cake launched me into baking for special orders. My sisters have learnt it too and it makes for a great cake for all occasions. I dress it up with chocolate curls and a light dusting of icing sugar - that's the signature classic look, or my family eats it 15 minutes out of the oven for a teatime treat, sometimes with a generous portion of vanilla ice cream. This cake is great chilled or warm.

Ingredients

  • 250 grams semi-sweet baking chocolate
  • 125 grams butter, room temperature
  • 3/4 cup self rising flour
  • 3/4 cup caster sugar
  • 4 - eggs

How To Make chocolate fudge cake

  • Step 1
    Melt the chocolate and butter over a double-boiler, set aside to cool.
  • Step 2
    Preheat oven to 180 Celcius. Line and grease an 8" x 8" cake tin.
  • Step 3
    Place sifted flour and sugar in a mixing bowl. Add the eggs and the cooled chocolate mixture. Mix using electric beater until mixture thickens and lightens in colour.
  • Step 4
    Pour into prepared tin and bake for 30 minutes.
  • Step 5
    Let cake sit in tin for 5 minutes before turning out to cool completely.
